Toffee Popcorn recipe

Try this easy recipe for making your own toffee popcorn much, much nicer than shop bought. Fabulous for a late night snack. It keeps for a week or so, too.

Ingredients:

450g dark brown sugar
250g butter
250g popped popcorn
8 tbsp. golden syrup
1 tsp. salt
1 tsp. vanilla extract
½ tsp. bicarbonate of soda

Directions:

1. Preheat the oven to 120C/gas mark ½. Grease two large baking trays.

2. Melt the butter. Stir in the golden syrup, sugar, and salt. Bring this to the boil, stirring all the while.

3. Once boiled, don't stir for around 5 minutes.

4. Remove this from the heat and stir in the vanilla and bicarb. Pour this thinly over the popcorn, giving everything a good stir to get the toffee covering the popcorn evenly.

5. Pour this mixture into the baking trays and bake in the oven for one hour. Check them every 15 minutes, stirring each time you check them.

6. Once set, break into pieces and serve.
